Vegetable Frittata


Tomorrow I have a friend of mine from Austria coming to spend a week with me! I am super excited to have her here! I met her in the USA last summer and now after one year I am going to see her again! Can’t wait!!!! 😀 She is a vegetarian and here at home non of us is a vegetarian so I decided to make a vegetarian dish for her to have tomorrow! I found a Frittata recipe and made it quite a few changes and ended up like this:

Ingredients:

600g zucchini / courgete

80g peas / ervilhas

10 medium mushrooms / cogumelos

3 egg / ovos

6 egg white / claras

150g Parmesan cheese (I used a light one) /queijo parmesão (eu usei um light)

Oregon, black pepper and parsley to taste / Oregãos, pimenta preta e salsa para temperar

Garlic / alho

Preparation:

1. Pre heat oven at 270ºC. / Pre aqueçer o forno a 270ºC. 

2. In a frying pan pour some olive oil and cut the some garlic to the pan. Add the zucchini and the seasoning and let it cook for about 5 minutes. Add the mushrooms. Let it cook for 2 more minutes. Finally add the peas (previously cooked). / Numa frigideira coloca-se um pouco de azeite e corta-se o alho para a frigideira. Adiciona-se a courgete e as ervas e deixa-se cozinhar por cerca de 5 minutos. Adiciona-se os cogumelos. Deixa-se cozinhar cozinhar por mais 2 minutos. Finalemnte adiciona-se as ervilhas (previamente cozinhadas).

3. Beat the egg yolk and the egg white and add it to the frying pan. Stir it well for about 2 minutes. Pour it to pie dish. Sprinkle it with the Parmesan cheese and take it to the oven just for a few minutes to give color to the cheese. Then it is ready to serve! / Batem-se as gemas com as claras e adiciona-se à mistura de legumes. Mexe-se bem durante cerca de 2 minutos. Coloca-se o preparado numa tarteira. Espalha-se o queijo parmesão por cima e leva-se ao forno até este tostar. E está pronto a servir!

I had some for lunch (well you know one and only just to make sure it was ok before I give it to my friend!! 😉 ) so I ate with lettuce and cucumber!

Comi uma fatia ao almoço (só e unicamente para ter a certeza que estava ok para a minha amiga claro!! 😉 ) por isso comi-a com alface e pepino!
