Peanut Butter Chocolate Cookies

Me and my always “on baking mode” were up to some peanut butter cookies this time! I decided to try a recipe I found making some changes on it and here it is how it turned:

  • 1/2 cup butter, softened / 1/2 chávena de manteiga amolecida.
  • 1/2 cup crunchy peanut butter / 1/2 chávena de manteiga de amendoim crunchy
  • 1/2 cup brown sugar, firmly packed 1/2 chávena de açucar amarelo
  • 1 egg / 1 ovo
  • 1 teaspoon of vanilla / 1 colher de chá de baunilha
  • 1 1/4 cups all-purpose flour / 1 + 1/4 chávena de farinha
  • 1/2 teaspoon baking powder / 1/2 colher de chá de fermento
  • 1/4 teaspoon salt / uma pitada de sal
  • 1 cup semisweet chocolate chips / 1 chávena de pepitas de chocolate
  • 1/2 cup of broken peanuts / 1/2 chávena de amendoins partidos

1. Preheat oven to 375° / aqueçer o forno a 190ºC.
2. Cream the butter, peanut butter, vanilla and sugar until light. Add the egg and mix until fluffy. / derrete-se a manteiga e mistura-se com a manteiga de amendoim, a baunilha e o açucar numa batedeira. Adiciona-se o ovo e mistura-se.

3. Blend the flour, baking powder, soda and salt together well. Add these dry ingredients to the butter mixture. Add the chocolate chips and the peanuts. / Mistura-se a farinha, o fermento e o sal e depois adiciona-se à mistura de manteiga. Adiciona-se as pepitas de chocolate e de amendoim.

4. Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 10-12 minutes at 375°. / Faz-se bolachas com a masse com o tamanho de aproximadamente uma colher de sopa e colocam-se num tabuleiro. Cozinha-se entre 10 a 12 minutos.

Note: If the dough gets too soft you can put it in the fridge for about 1 hour so it will be easier to work with it. / Nota: se a massa ficar muito mole pode colocar-se no frigorifico por cerca de 1 hora e depois será mais fácil de trabalhar com ela.

I made some changes from the original recipe on order to do some healthy swaps such as in the flour I used Whole wheat flour instead of white flour. I also added some vanilla and cut in some sugar! What about you, any healthy swaps suggestions? I would love to hear from you! 🙂
